Barley is a great alternative for pasta lovers – it has the same satisfying chew but is filled with so much more fibre and protein. Barley also works wonders in winter soups.

Ingredients
- 200 g pearl barley
- 6 sticks celery chopped into small dice
- 60 ml olive oil extra virgin
- 3 tbsp sherry vinegar
- 2 cloves garlic crushed
- 1 tsp allspice ground
- 3 tbsp dill chopped
- 2 tbsp parsley chopped
- 300 g pomegranate rubies
- sea salt to taste

Instructions
- Rinse the barley with cold water, then place in a medium saucepan and cover with plenty of fresh water.
- Simmer for 30 – 40 minutes, or until tender but still with a bite.
- Drain the barley and transfer to a mixing bowl. While it is still hot, add the celery, olive oil, vinegar, garlic, allspice and some salt and pepper. Stir, then leave to cool down completely.
- Once cool, add the herbs and pomegranate rubies and mix everything together.
