Butternut & Chickpea Curry
This is one of the best family recipes I have. I got it from my friend Martie and use it weekly. It is super easy (like in SUPER easy), healthy and cheap. I always buy the coconut milk, chickpeas and Indian tomato mix in bulk, then I know I always have a recipe to fall back on since potatoes and butternut are pretty standard ingredients in our house. Best of all, my kids absolutely love this recipe!

INSTRUCTIONS
  1. Mix together the chickpeas, coconut milk, indian tomato mix, butternut and potatoes in a large pot. Close the pot with a lid and let it simmer for 45 minutes. Salt and pepper to taste and garnish with coriander. Serve with rice.
