Lately I found myself buying grain-free carb-clever granola from Woolworths, our amazing and innovative grocery store in South Africa, on a weekly basis. As I was strolling along the grocery aisle one day, my eye caught sight of this new food item which read: "Carb-clever Coco Granola". I thought, "that sounds delicious"! It was quite expensive, as most of the low-carb items are, but I thought I will just try it once and then aim to make a homemade version. The "once" became 5 times, but then I seriously start feeling guilty for spending that much money on something that should be fairly easy to make.

What really got me going was the fact that we moved to a place that does not have any luxury food stores close to our home, and I was running out of the store-bought granola. It left me with no choice. I need to make my own. With a happy feeling in my heart, I started to experiment.

After a couple of tries, I have put together this recipe and needless to say, it is a staple in my diet at the moment. It is too delicious to only have this amazing chocolate granola for breakfast. It ends up being a snack or even a healthy desert as well.

My favorite way to eat it is to put the chocolate grain-free granola in a glass and top it with greek yogurt and strawberries. I prefer to do it without a drizzle of honey, but if you want to make it a bit sweeter, you can drizzle some raw honey on top.

  1. Line two baking sheets with baking paper. Preheat the oven to 150 C.
  2. Add the nuts and seeds to a food processor or blender and chop until all the seeds and nuts are the same size. Do not blend until it is a powder, it still needs to be a bit chunky.
  3. Place the nuts and seeds in a bowl. Add the cacao powder, chia seeds, cinnamon, shredded coconut, desiccated coconut and salt. Mix well.
  4. Melt coconut oil, but do not boil the oil. Add the honey and vanilla extract.
  5. Combine the dry and wet ingredients and mix well.
  6. Spread the mixture evenly out on 2 separate baking sheets. The mixture must not be thicker than 1 cm.
  7. Place it in the oven and bake for 30 - 35 minutes. After 15 minutes, stir the granola a couple of times to bake evenly and prevent the granola to burn. The granola is ready when it is golden. It will harden while it cools outside of the oven.
  8. Store the cool-downed granola in an airtight container for up to a month.
