  1. In a saucepan, fry the miso paste for 1 minute. Add the tamari, anise, ginger, garlic and chili. Fry another minute then add the chicken stock. Simmer gently until you prepare the rest of the ingredients.
  2. Cook noodles and set aside. Boil eggs and set aside.
  3. In a separate pan, start to cook the duck breast. Place the duck breast skin down on the pan and let it heat with the pan. Cook for 10 minutes skin down to cook out the fat. When the skin is golden, turn the duck around and cook another 4 minutes. Once cooked, remove from the pan, cover with foil and let it rest for 5 minutes.
  4. Place the pak choi and noodles in serving bowls. Strain the broth, keep the liquid and discard the solids. Add the liquid to the bowls and top with the sliced duck and boiled egg. Top with coriander.
