pesto
INSTRUCTIONS
Mix the eggs lightly with a fork. Add the salt and milk. Do not over mix it because you still want to see a bit of the yolk streaked through.
Melt the butter in a frying pan over medium heat and then pour the egg mixture into the pan.
Once the eggs settle, gently fold it, but do not stir. Pause, then fold again.
After 1 minute, add the pesto and fold again until soft but still runny.
Remove from the heat and let it sit. Gently stir to ensure it is cooked.
Serve the green eggs with cherry tomatoes, toast and ham.
