This salad is almost too beautiful to eat.

Colourful salads make me very happy. It adds that extra shine into any dull day. This salad celebrates Summer or Spring.

There are 3 reasons why I am in love with this salad: 1. It is super easy. It will take you under 1 minute to prepare - I promise you! 2. It looks extremely impressive. It will catch the eye of any guest and even if they don't eat salads, they will be tempted to add this side salad to their plate to add some spark! 3. It is very healthy. The red color in the berries are cancer fighting and enhance your health in a number of ways.

If you are not familiar with eating edible flowers, this might convince you: Nasturtiums, which I used in this recipe, contain cancer-fighting lycopene and lutein. Eating Nasturtiums is also very beneficial for vision health.

There are tons of other edible flowers (be sure to check if it is edible before you eat them!). My favourites are Violets, Rose petals and Lavender. Violets help strengthen capillary walls because it is high in rutin, a phytochemical with antioxidant and anti-inflammatory properties. Rose petals are high in vitamins A, B3, C and E. Eating Lavender is beneficial for your central nervous system and contains vitamin A, calcium and iron.

Instructions
  1. Put together the salad, starting with the baby spinach leaves. Top it with the berries, avocado and edible flowers.
  2. Blend all the ingredients of the raspberry vinaigrette together.
  3. Pour the raspberry vinaigrette over the salad just before serving.
