  1. Spread the fennel onto a baking tray and grill for 5 - 10 minutes. Remove from the oven. Drizzle the salmon with olive oil and put it on-top of the fennel.
  2. Place everything under the grill for a further 5 - 10 minutes.
  3. Season with salt and pepper and serve with a lemon wedge.
