I am always searching for sugar-free treats. One day, I was on a mission to find a creamy and authentic ice cream recipe that is sugar-free. I started to play around and ended up with a magical combination of honey and cinnamon. It still needed to pass a test: Did my family like my new sugar-free ice cream? Yes, they loved it!
HONEY VS SUGAR
Although honey, like sugar, gives you an instant spike in your energy and is not a slow releasing energy source, it is still much healthier than refined sugar. Honey contains the perfect combination of vitamins and minerals that your body needs to metabolise this energy. Refined sugar is stripped of all this precious vitamins and minerals. This is actually a big deal, because now your body needs to get these vitamins and minerals from your healthy cells to try and compensate for their deficiency in order to metabolise this food. This is damaging to your cells and end up putting a lot of strain on your health.
I always try to buy raw and organic honey. It might be worth it to source if there is a local farmer that sells honey. Honey can be an expensive item, and buying directly from the farmer is always a great way to get your money go further.

Instructions
- Place the cream, milk and cinnamon in a saucepan over low heat.
- Increase the heat and stir in the honey. Stir the mixture until it just comes to a boil and then remove it from the heat. Leave the mixture to cool and then transfer it to a bowl and freeze.
- You can put the ice cream mixture in an ice cream machine or you can take out the mixture from the freezer every hour and then give it an energetic whisk. Do this until most of the ice crystals have disappeared and your have a ice cream consistency.
