Ingredients
- Salsa Verde
- 2 tomatoes chopped
- 1 cup parsley chopped
- 6 fillets anchovy chopped finely
- 2 tbsp lemon juice
- 1/2 cup olive oil extra virgin
- 1/2 tsp black pepper
- Red Curry Chicken Salad
- 3 cups watercress and rocket leaves
- 3 chicken breasts free-range, sliced
- 20 ml red curry paste
- 4 tbsp sour cream

Instructions
Salsa Verde
- Mix all the ingredients for the salsa verde together and set aside.
Red Curry Chicken Salad
- Heat the olive oil. Add the chicken slices and fry until golden brown and cooked.
- Add red curry paste and stir-fry for 2 minutes.
- Add sour cream and mix.
- Cool slightly before serving.
- Arrange the salad leaves, top slightly cooled red curry chicken and spoon over the salsa verde.
