  1. Preheat the oven to 200 C and grease the muffin tray.
  2. Place the bacon at the bottom of the tray. Line the muffin tray with the bacon as if the bacon was a cupcake holder.
  3. Bake the bacon for 5 minutes and then remove from the oven.
  4. Fill the bacon cups with chopped spinach then gently crack 1 egg into each bacon cup.
  5. Top the egg with crumbled feta and a generous gallop of basil pesto.
  6. Bake for 15 minutes.
  7. Remove from the oven and let the bacon cakes rest for 5 minutes before serving.
