Ingredients
- 8 rashes bacon Nitrate free
- 8 eggs organic
- 1 cup spinach chopped
- 1/2 cup feta cheese crumbled
- 8 tsp basil pesto

Instructions
- Preheat the oven to 200 C and grease the muffin tray.
- Place the bacon at the bottom of the tray. Line the muffin tray with the bacon as if the bacon was a cupcake holder.
- Bake the bacon for 5 minutes and then remove from the oven.
- Fill the bacon cups with chopped spinach then gently crack 1 egg into each bacon cup.
- Top the egg with crumbled feta and a generous gallop of basil pesto.
- Bake for 15 minutes.
- Remove from the oven and let the bacon cakes rest for 5 minutes before serving.
