  1. Combine the chilli, pepper and zest in a mortar and grind to form a coarse paste.
  2. Rub the paste over the meat. Brown the meat on a hot grill for 2 - 4 minutes each side, taking care not to overdo the meat.
  3. It still need to be slightly raw inside. Allow to stand 10 minutes before slicing.
  4. Heat the butter and fry the mushroom for 5 minutes. Add the lemon juice and soy sauce. Stir-fry a further 2 minutes. Remove form the heat.
  5. Mix the meat and mushroom mixture, basil and mint.
  6. Arrange onto plates and serve with coriander
