Ingredients
- 1 red chilli seeded and minced
- 2 tsp black pepper
- 1 tsp lemon zest grated
- 500 g beef fillet
- 1 tbsp shitake mushrooms
- 250 g button mushroom
- 1 lemon juiced
- 1 tbsp soy sauce
- 1/2 cucumber peeled and diced
- 2 spring onions thinly sliced
- 1 cup basil leaves chopped
- 1/2 cup mint chopped

Instructions
- Combine the chilli, pepper and zest in a mortar and grind to form a coarse paste.
- Rub the paste over the meat. Brown the meat on a hot grill for 2 - 4 minutes each side, taking care not to overdo the meat.
- It still need to be slightly raw inside. Allow to stand 10 minutes before slicing.
- Heat the butter and fry the mushroom for 5 minutes. Add the lemon juice and soy sauce. Stir-fry a further 2 minutes. Remove form the heat.
- Mix the meat and mushroom mixture, basil and mint.
- Arrange onto plates and serve with coriander
