Favorite family recipe. When we finish eating the chicken meat, I use the left over case for chicken stock. Rosemary not only tastes good in culinary dishes, but it is also a good source of iron, calcium, and vitamin B6.

Instructions
- Preheat the oven to 200 C. Crust the garlic and combine it with the olive oil, tamari, chopped rosemary, salt and pepper.
- Place the chicken in a roasting pan, breast skin side up. Using your hand, lift the skin that covers the chicken’s breast and place generous amounts of the garlic rosemary filling under the skin. Do this on both sides.
- Bake, uncovered for 45 minutes – 1 hour (depending on the size of the chicken).
