Instructions
- Mix the eggs lightly with a fork. Add the salt and milk. Do not over mix it because you still want to see a bit of the yolk streaked through.
- Melt the butter in a frying pan over medium heat and then pour the egg mixture into the pan.
- Once the eggs settle, gently fold it, but do not stir. Pause, then fold again.
- After 1 minute, add the pesto and fold again until soft but still runny.
- Remove from the heat and let it sit. Gently stir to ensure it is cooked.
- Serve the green eggs with cherry tomatoes, toast and ham.
