It always makes me very happy to combine fruit, feta cheese and nuts in any salad. For a dairy free option, don’t add feta.

- Salad
- 3 cups mixed salad leaves
- 2 papayas peeled and cubed
- 12 strawberries halved
- 200 ml feta cheese cubed
- 100 g pistachio nuts
- Dressing
- 3 tbsp lemon juice
- 60 ml sweet chili sauce
- 2 tbsp olive oil extra virgin
- 30 ml mint

Instructions
Salad
- Arrange the mixed salad leaves and fruit on platter and scatter with feta and pistachio nuts.
Dressing
- Mix the lemon juice, sweet chili sauce, olive oil and mint leaves. Pour the dressing over the salad.
