Preheat the oven to 180 C. Using a small knife, trim the ends of the french beans. Bring water to the boil. Keep the french beans and mangetout. separate. The beans need a lot of space, as this is crucial to preserve their colour. Blanch the french beans for 4 minutes, then run under cold water. Leave to drain and dry. Repeat with mangetout but only for 1 minute.
Scatter the hazelnuts over a baking tray and roast in the oven for 10 minutes. Leave to cool and rub with a towel to get rid of most of the skins. Shop the nuts with a sharp knife.
Remove the zest from the orange, leave the white part.
Mix the oils and mix the vegetables, herbs, oils, nuts and zest.
