There are some fruit that simply tastes better in Africa. I am originally from South Africa, and amongst others, we have the most amazing papayas. In the Winter time, there is nothing that can beat this soft, delicious fruit. My children love to eat a big papaya for breakfast all by themselves!
Papayas are full of enzymes and are extremely nourishing to your stomach. It is definitely one of my favourite fruit - especially the ones produces by the African continent! For some reason the papayas in America doesn't taste good. Perhaps I was unlucky, or maybe it is a California thing, but don't try to eat a papaya, if you are used to the delicious papayas from Africa.
I love to combine the papaya with the mozzarella cheese and the basil. One thing is certain, you need to make the special Basil & Mint Dressing! Make a double batch and keep the dressing in the refrigerator to use whenever you enjoy your next salad. It is really good!

Ingredients
- Salad
- 1 papaya peeled and sliced into wedges
- 6 balls fresh mozzarella bocconcini halved
- 4 radishes grated
- 100 g pistachio nuts
- 2 cup baby spinach organic
- Basil & Mint Dressing
- 2 tbsp basil chopped
- 1 tbsp mint chopped
- 1 tbsp lemon juice
- 3 tbsp olive oil extra virgin
- 1 tbsp Dijon mustard

Instructions
Salad
- Arrange the sliced papaya wedges and spinach leaves on a plate and tear the mozzarella into bite size pieces.
- Put some grated radishes and pistachio nuts over the salad.
Dressing
- Mix all the ingredients together.
- Pour the dressing over the salad just before serving.
