Ingredients
- 4 cups watermelon chopped
- 1/2 red onion diced
- 1 red pepper seeded and diced
- 2 tbsp lemon juice
- 1 tbsp olive oil extra virgin
- salt and pepper
- 1 chilli seeded and finely chopped (optional)
- 1 cup basil finely chopped

Instructions
- Pulse the watermelon, onion and pepper in a food processor until well blended.
- Mix in the lemon juice and olive oil and season.
- Add the chilli. Refrigerate for 2 hours.
