This is a great detox and weight loss meal! Remember to add garlic. It adds lovely flavour to the vegetables. Garlic is a natural antibiotic and helps to stimulate and protect your immune system.

Ingredients
- Ratatouille
- 2 baby eggplants chopped coarsely
- 1 red pepper chopped coarsely
- 2 zucchinis chopped coarsely
- 1 clove garlic crushed
- 100 g mushroom chopped coarsely
- 150 g cherry tomatoes halved
- 2 tbsp olive oil extra virgin
- Dressing
- 2 tbsp parsley chopped
- 2 tbsp basil chopped
- 2 tbsp lemon juice
- 2 tbsp slivered almonds
- 1 clove garlic
- 1 tbsp olive oil extra virgin

Instructions
- Preheat the oven to 180C.
- Combine the eggplant, pepper, baby marrow and garlic and roast for 30 minutes.
- Remove from the oven and stir the vegetables.
- Add the mushrooms and tomatoes and roast a further 10 minutes.
- When the vegetables are tender, remove from the oven and pour over the almond dressing.
