This is a great detox and weight loss meal! Remember to add garlic. It adds lovely flavour to the vegetables. Garlic is a natural antibiotic and helps to stimulate and protect your immune system.

No. of Servings:
  1. Preheat the oven to 180C.
  2. Combine the eggplant, pepper, baby marrow and garlic and roast for 30 minutes.
  3. Remove from the oven and stir the vegetables.
  4. Add the mushrooms and tomatoes and roast a further 10 minutes.
  5. When the vegetables are tender, remove from the oven and pour over the almond dressing.
