Ingredients
- 60 g watercress
- 400 g smoked boneless chicken breast thinly sliced
- 100 g goat's cheese log crumbled
- 2 handsful cherry tomatoes halved
- 50 g pistachio nuts chopped

Instructions
- Combine the olive oil and lemon juice and drizzle it over the salad.
- Preheat the oven griller. Place the halved cherry tomatoes into a baking tray. Put them under the griller for about 10 minutes. Remove from the oven and cool slightly.
- Arrange the watercress on a platter and sprinkle with olive oil and lemon juice.
- Add the sliced smoked chicken, goat's cheese and roasted cherry tomatoes.
- Sprinkle with chopped pistachio nuts.
