  1. Combine the olive oil and lemon juice and drizzle it over the salad.
  2. Preheat the oven griller. Place the halved cherry tomatoes into a baking tray. Put them under the griller for about 10 minutes. Remove from the oven and cool slightly.
  3. Arrange the watercress on a platter and sprinkle with olive oil and lemon juice.
  4. Add the sliced smoked chicken, goat's cheese and roasted cherry tomatoes.
  5. Sprinkle with chopped pistachio nuts.
