  1. Run a vegetable peeler along the length of the celery sticks. To create curls, transfer the ribbons to a bowl of iced water for a few minutes.
  2. Spoon the avocado flesh out, toss with the lemon juice and avocado oil. Season to taste with salt and pepper.
  3. Arrange the sprouts and rocket onto a platter. Scatter avocado, celery curls, radishes and toasted walnuts over the leaves.
  4. Drizzle with remaining oil from avocados and perhaps extra cold-pressed olive oil if preferred.
