Ingredients
- 4 stick celery
- 4 avocado thickly sliced
- 1 lemon juiced
- 1/3 cup avocado oil (or olive oil)
- salt and pepper
- 4 radishes sliced thinly
- 100 g walnuts toasted lightly (or raw)
- 1/2 cup sunflower sprouts
- 1/2 cup alfalfa sprout
- 1/2 cup rocket leaves

Instructions
- Run a vegetable peeler along the length of the celery sticks. To create curls, transfer the ribbons to a bowl of iced water for a few minutes.
- Spoon the avocado flesh out, toss with the lemon juice and avocado oil. Season to taste with salt and pepper.
- Arrange the sprouts and rocket onto a platter. Scatter avocado, celery curls, radishes and toasted walnuts over the leaves.
- Drizzle with remaining oil from avocados and perhaps extra cold-pressed olive oil if preferred.
