- Asparagus & Halloumi Salad
- 200 g asparagus blanced
- 200 g halloumi cheese
- coconut oil
- Olive Dressing
- 2 cloves garlic crushed
- 1/2 cup parsley chopped
- 1/3 cup black olives chopped
- 3 tbsp olive oil extra virgin

Instructions
- Blanch the asparagus quickly. Make sure you keep them fresh and crisp and not overdo it.
- Slice the halloumi cheese into 5 mm slices. Fry them briefly in the hot coconut oil until crisp and browned.
- Arrange the asparagus on a plate and top with the halloumi cheese and olive dressing.
