Ingredients
- 2 sheets nori
- 2 tsp sesame oil
- pepper
- 4 fresh tuna steaks
- olive oil
- salt
- 3/4 cup sour cream
- 1 tsp wasabi paste
- 1 tsp ginger grated
- 1/2 lemon juice
- 320 g spinach leaves
- pickled ginger to serve
- soy sauce to serve

Instructions
- Preheat the oven to 200 C. Brush the nori with oil and season with black pepper.
- Cut into thin strips then place it on a baking tray.
- Bake for 10 minutes. Remove from the oven.
- Reduce the heat to 100 C. Brush the trout with oil and place on a lined baking tray. Bake for 25 minutes.
- Combine sour cream, wasabi, ginger and lemon juice.
- Steam baby spinach briefly, drain and divide it on four plates.
- Place the trout on top of the spinach and top with a gallop of wasabi dressing and nori crisp.
- PS: This dish is great served with pickled ginger and soy sauce.
