Brush the nori with oil and season with black pepper. Cut into thin strips then place it on a baking tray. Bake for 10 minutes. Remove from the oven. Reduce the heat to 100 C. Brush the trout with oil and place on a lined baking tray. Bake for 25 minutes. Combine sour cream, wasabi, ginger and lemon juice. Steam baby spinach briefly, drain and divide it on four plates. Place the trout on top of the spinach and top with a gallop of wasabi dressing and nori crisp. PS: This dish is great served with pickled ginger and soy sauce.
