Ingredients
- Salad
- 1 large butternut peeled and cubed
- 3 tbsp coconut oil for roasting the butternut
- 1/2 tsp sea salt
- 1 tsp cinnamon
- 3 cups rocket
- 2 orange peeled and cut into small pieces
- 250 ml flaked almonds
- Dressing
- 75 ml orange juice
- 45 ml maple syrup
- 100 ml olive oil extra virgin
- 10 ml lemon juice
- 1 drop almond essence optional

Instructions
- Preheat the oven to 180C.
- Roast the butternut with the coconut oil and sprinkle with a bit of salt and cinnamon.
- Roast until golden, for about 30 minutes.
- When you remove the butternut from the oven, drizzle 1 tablespoon honey over the butternut.
- Arrange the rocket on a salad plate and top with butternut, orange and almonds.
- Pour dressing over salad.
