I sometimes use 200 g stoneground cake flour and 80 g organic white spelt flour in this recipe. Spelt flour is very healthy and adds a lovely nutty flavor.

Ingredients
- 170 g xylitol honey or 100% maple syrup can also be used
- 140 g butter melted
- 2 eggs
- 200 g bananas mashed
- 280 g stoneground flour
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ginger optional

Instructions
- Preheat the oven to 170 C.
- Put the xylitol and eggs in a freestanding electric mixer and beat until well incorporated. Beat in the mashed bananas.
- Add the flour, baking powder, bicarbonate of soda, cinnamon and ginger to the egg mixture. Mix it thoroughly until all the dry ingredients have been incorporated into the egg mixture.
- Pour in the melted butter and beat until all the ingredients are well mixed. Do not overmix.
- Pour the mixture into the prepared loaf tin (23 x 13 cm loaf tin, greased). Bake in the preheated over for about 1 hour.
