I sometimes use 200 g stoneground cake flour and 80 g organic white spelt flour in this recipe. Spelt flour is very healthy and adds a lovely nutty flavor.

  1. Preheat the oven to 170 C.
  2. Put the xylitol and eggs in a freestanding electric mixer and beat until well incorporated. Beat in the mashed bananas.
  3. Add the flour, baking powder, bicarbonate of soda, cinnamon and ginger to the egg mixture. Mix it thoroughly until all the dry ingredients have been incorporated into the egg mixture.
  4. Pour in the melted butter and beat until all the ingredients are well mixed. Do not overmix.
  5. Pour the mixture into the prepared loaf tin (23 x 13 cm loaf tin, greased). Bake in the preheated over for about 1 hour.
