My love affair with quinoa started 8 years ago.
It is such a satisfying and comforting food. Quinoa reigns in every season - there is always a good time to serve it warm in the Winter and Fall or simply dish up a lovely chilled salad in Summer and Spring.
Quinoa is super easy to cook, it can be frozen in batches and probably most important - it is gluten-free! It is a great substitute for cereal, porridge, couscous and bulgur wheat. Many people assume that quinoa is a grain. The surprising fact is that quinoa is a seed! That makes it much easier to digest and is packed with all eight amino acids, making it a complete protein.
Quinoa is a miracle in itself, but let's talk about the recipe. Personally I love Asian food, and combining Asian flavours with quinoa is really a treat you need to enjoy. When you add ginger, crunchy peanuts, herbs and fresh celery to quinoa and you have an unforgettable experience! Don't forget to make the irresistible dressing! Like they say, the secret is in the sauce. Honey and lemon has such a beautiful taste and is also super healthy.
This Asian quinoa salad is great for when you have friends over, or as a stunning mid-week light lunch to refuel for the rest of the week.

Ingredients
- Quinoa Salad
- 1 cup quinoa
- 2 cups chicken stock
- 1 5 cm piece fresh ginger grated
- 1 small bunch chives chopped finely
- 1/4 bunch coriander chopped
- 1 clove garlic crushed
- 2 sticks celery chopped finely
- 1/2 cup peanuts or salted cashew nuts
- Dressing
- 2 tbsp olive oil extra virgin
- 1 tbsp honey or 5 drops stevia
- 3 tbsp lemon juice
- 1 tsp sea salt

Instructions
- Combine quinoa and stock in a medium saucepan and bring to the boil. Reduce heat and simmer for about 20 minutes (or until most of the liquid is absorbed).
- While the quinoa is cooking, mix the remaining ingredients (except the peanuts or cashews).
- Cool the quinoa slightly and then add the dressing to the quinoa.
- Sprinkle to peanuts over the salad just before serving. Season with salt and pepper.
- This salad can be served hot or cold.
