Buy good quality sourdough bread - it is always worth it!

  1. Preheat the oven to 180 C.
  2. Cook the quinoa by boiling it for 9 minutes in boiling water. Drain and set aside.
  3. Brush the bread with olive oil and sprinkle with salt. Lay the bread on a baking tray and bake for about 10 minutes. Turn around half way. Remove from the oven and cool. Break into smaller bite-size pieces.
  4. Cut the tomatoes and add the rest of the ingredients.
  5. Mix everything together. Taste and adjust seasoning.
