Ingredients
- 40 g quinoa
- 4 slices sourdough bread
- 70 ml olive oil extra virgin (plus extra for brushing the bread)
- 3 small cucumbers peeled and cubed
- 4 tbsp mint chopped
- 4 tbsp parsley chopped
- 1 tbsp lemon juice
- 1 tbsp red wine vinegar
- 2 cloves garlic crushed
- sea salt and black pepper to taste

Instructions
- Preheat the oven to 180 C.
- Cook the quinoa by boiling it for 9 minutes in boiling water. Drain and set aside.
- Brush the bread with olive oil and sprinkle with salt. Lay the bread on a baking tray and bake for about 10 minutes. Turn around half way. Remove from the oven and cool. Break into smaller bite-size pieces.
- Cut the tomatoes and add the rest of the ingredients.
- Mix everything together. Taste and adjust seasoning.
