Green beans are filled with cancer-fighting antioxidants vitamin A and vitamin C. It also supports a healthy heart because it is rich in potassium, manganese and fiber. Another great weight-loss salad!

  1. Top the beans, blanch and set aside in cold water. Peel the carrots and slice into long strips.
  2. For the vinaigrette, mix together all the ingredients.
  3. Drain the beans and in a bowl mix the beans together with the carrots. Pour the vinaigrette over them and set aside.
  4. When ready to serve, add the watercress or any other green to the beans and carrots . Sprinkle with the sesame seeds and mix together well.
  5. Serve garnished with fresh herbs.
