These bars are nutty and fruity and totally addictive. I make them and store them in my freezer. It is a great snack to have when someone needs a yummy, loaded snack.

- Base and Filling
- 120 g plain flour stoneground and organic
- 1/2 tbsp baking powder
- 100 g butter
- 80 g rolled oats
- 60 g brown sugar organic
- 220 g raspberry jam I buy St. Dalford's jam because it is sugar free and still delicious
- Topping
- 100 g butter
- 80 g almonds flaked
- 80 g pecans chopped
- 80 g hazelnuts chopped
- 50 g brazil nuts chopped
- 50 g honey
- 40 ml milk
- 1 tsp vanilla essence

- Preheat the oven to 170 C and grease and line a 20 cm square tin.
- Sift flour and baking powder. Add butter and sugar and rub together with your fingertips. Add the oats and stir.
- Spread this mixture over the base (do not press too much) and bake for 20 minutes. Remove from the oven, allow to cool and then spread with the jam.
- Place nuts in a bowl. Heat butter, honey, milk and vanilla in a separate small saucepan.
- Pour the mixture over the nuts and stir together.
- Place the nut mixture evenly over the jam and bake in the oven for a further 30 minutes.
- Leave to cool and then remove from the tin and cut into slices.
