This is one of the best family recipes I have. I got it from my friend Martie and use it weekly. It is super easy (like in SUPER easy), healthy and cheap. I always buy the coconut milk, chickpeas and Indian tomato mix in bulk, then I know I always have a recipe to fall back on since potatoes and butternut are pretty standard ingredients in our house. Best of all, my kids absolutely love this recipe!

Ingredients
- 1 can chickpeas
- 1 can coconut milk
- 1 can Indian tomato mix
- 1 butternut peeled and cubed
- 4 potatoes unpeeled and cubed
- 2 tbsp coriander
- salt and pepper to taste

Instructions
- Mix together the chickpeas, coconut milk, indian tomato mix, butternut and potatoes in a large pot. Close the pot with a lid and let it simmer for 45 minutes. Salt and pepper to taste and garnish with coriander. Serve with rice.
