This recipe contains dried apricots. Look out for the ones that does not contain sulphur dioxide. Fresh apricots are excellent sources of several important nutrients, including fiber, potassium and antioxidant carotenoids.

Instructions
  1. Mix together the couscous, apricots, pomegranates and pecan nuts.
  2. Make a dressing by mixing together the garlic, chili, parsley, chives, olive oil and lemon juice.
  3. Marinate the feta in the dressing.
  4. When ready to serve, spoon the cous cous onto a platter and top with the feta.
  5. Drizzle over the remaining dressing.
