This recipe contains dried apricots. Look out for the ones that does not contain sulphur dioxide. Fresh apricots are excellent sources of several important nutrients, including fiber, potassium and antioxidant carotenoids.

Ingredients
- 200 g whole wheat cous cous prepared
- 200 g cous cous prepared
- 6 dried apricots cut into small pieces
- 100 g pomegranate rubies
- 100 g pecans halved
- 1 clove garlic
- 1 red chilli optional
- 20 g italian parsley chopped
- 20 g chives chopped
- 125 ml olive oil extra virgin
- 3 tbsp lemon juice
- 200 g feta cheese cubed

Instructions
- Mix together the couscous, apricots, pomegranates and pecan nuts.
- Make a dressing by mixing together the garlic, chili, parsley, chives, olive oil and lemon juice.
- Marinate the feta in the dressing.
- When ready to serve, spoon the cous cous onto a platter and top with the feta.
- Drizzle over the remaining dressing.
