Super healthy and super delicious! Salmon is my favourite fish of all. It is high in Omega-3's which makes it fuel for the brain and body.
The pesto is unique in every sense of the word. Most pesto's contain only one herb, but this pesto has a lovely mix of parsley, thyme, rosemary and oregano. I love to make pesto in bulk and freeze them in ice cubes to use it later. Pesto freezes beautifully.

Instructions
Flavor-burst Pesto
- Preheat the oven to 200 C.
- Combine all the pesto ingredients, except the oil and process in a food processor until smooth. Add the olive oil and pulse until everything is mixed.
Salmon
- Spread pesto on top and to the sides of the salmon fillets and bake for 12 – 15 minutes (depending on the thickness of the salmon).
