Super healthy and super delicious! Salmon is my favourite fish of all. It is high in Omega-3's which makes it fuel for the brain and body.

The pesto is unique in every sense of the word. Most pesto's contain only one herb, but this pesto has a lovely mix of parsley, thyme, rosemary and oregano. I love to make pesto in bulk and freeze them in ice cubes to use it later. Pesto freezes beautifully.

Flavor-burst Pesto
  1. Preheat the oven to 200 C.
  2. Combine all the pesto ingredients, except the oil and process in a food processor until smooth. Add the olive oil and pulse until everything is mixed.
Salmon
  1. Spread pesto on top and to the sides of the salmon fillets and bake for 12 – 15 minutes (depending on the thickness of the salmon).
