Green. Glorious. Easy. Delicious.

Goodness in a bowl... or shall I say, detox in a bowl. You will probably be eating one of the healthiest meals of your life and you won't even notice it because you will enjoy it so much. The first time I've made this soup I thought I am only going to take a bite and finish it later, but I simply couldn't leave it. I had to finish the bowl! My seven year old daughter and husband even loved it! The bright green colours might scare you, but trust me - this is a must have. The best of all, it really is super easy. You can have a awesome, delicious and super nutritious meal in under 15 minutes.

It is no secret that broths are very healthy. Broths are good for your gut, protects your joints, boosts your immune system, maintains a healthy skin and give your metabolism a jump-start to facilitate anabolism. I remember once I went to the hospital to get my appendix removed and guess what they served me after the op... a broth. It is also said that in some cultures people only serve broths to their family members when they are sick because it helps them to recover quicker. Bottom-line - broths are great. Now imagine, you eat a GREEN broth! Add some asparagus and parsley to this wonder meal and you are assured to invite happiness into your day. To name a few benefits: Asparagus are super alkaline (lower you acidity levels in you body, which means your body will function better as a whole), high in vitamin B1 (which means increased energy) and vitamin K (which is your blood clotting vitamin). Asparagus are also cancer fighting and are very nourishing for your digestive track.

  1. Boil stock and asparagus spears for 3 minutes. Remove from heat and add the parsley. Blend until smooth. *I used a Vita Mix blender so the broth was very smooth and there was no need to strain the broth, but if you find that there are still pieces of asparagus left in your broth, strain it before serving.
  2. Heat olive oil and fry the garlic and cauliflower rice. Squeeze over the lemon juice.
  3. Place the noodles in a bowl of hot water for 4 minutes. Drain. PS: In South Africa you can buy the spinach-and-cauliflower noodles at Woolworths.
  4. To assemble: place the noodles in a bowl. Top with cauliflower rice and pour over the asparagus broth. End off the dish by topping it with sliced sugar snap peas.
