I love this healthy twist on the traditional Waldorf Salad. If you add the chicken it is a substantial meal. Try to buy free-range chicken. A 2003 study by Penn State University researchers found that eggs from pastured hens have higher levels of vitamins A, E and omega 3 fatty acids.

Ingredients
- 4 chicken breasts free-range
- 2 tbsp olive oil extra virgin
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 1 cup plain yogurt
- 1 tbsp lemon juice
- 2 tbsp whole grain mustard
- 2 apples red
- 150 g watercress
- 50 g walnuts
- 4 sticks celery chopped

Instructions
- Place a pan over a medium to high heat. Toss the chicken breast in olive oil and season to taste. Fry the chicken breasts for 4 minutes a side, or until the juices run clear but the meat is cooked but still succulent. Remove from the heat and clive.
- Combine the yogurt with the lemon juice and mustard.
- Cut the apples into wedges and toss in the yogurt dressing.
- Arrange the greens on serving plates and top with the apples, walnuts, celery and grilled chicken breasts. Season to taste and serve.
