I love this healthy twist on the traditional Waldorf Salad. If you add the chicken it is a substantial meal. Try to buy free-range chicken. A 2003 study by Penn State University researchers found that eggs from pastured hens have higher levels of vitamins A, E and omega 3 fatty acids.

Instructions
  1. Place a pan over a medium to high heat. Toss the chicken breast in olive oil and season to taste. Fry the chicken breasts for 4 minutes a side, or until the juices run clear but the meat is cooked but still succulent. Remove from the heat and clive.
  2. Combine the yogurt with the lemon juice and mustard.
  3. Cut the apples into wedges and toss in the yogurt dressing.
  4. Arrange the greens on serving plates and top with the apples, walnuts, celery and grilled chicken breasts. Season to taste and serve.
