This cheesecake is a nutrition powerhouse and is extremely delicious. Packed with raw goodness, it is filled with omega's, antioxidants and protein.

There came a time in my life where I decided to rather not take original recipes and convert it into a healthy version. I had so many disasters that I simply decided to rather stick to healthy food in it's natural form and then, once in a blue moon, we will eat the "real thing".

To tell you the truth, I was a bit sceptic the first time I made this Raw Berry Cheesecake. I promised myself to only try it once, and if I don't like it, I won't ever try it again. I guess I got lucky. It was fabulous!

Tart Base
  1. Blend all the ingredients together in a food processor.
  2. Press it tightly in a tart base and refrigerate.
Berry Cheesecake
  1. Drain the cashews.
  2. Blend all the ingredients together in a power blender.
  3. Pour the cheesecake mixture on top of the base and refrigerate until set. It will take about 4 - 6 h to set in the fridge.
