Salmon & Asparagus
  1. Blanch the asparagus spears in salted water until just softened but still crunchy.
  2. Fry the salmon steaks in butter for 2 minutes per side (keep it quite raw on the inside).
  3. Place 4 asparagus spears on the bottom of the salmon steaks.
  4. Top with Hollandaise sauce.
Hollandaise sauce
  1. Whisk the egg yolks and water together over low heat for 2 minutes until thick and foamy. Remove from the heat.
  2. Slowly pour the melted butter into the egg yolk mixture. Whisk continually until it forms a thick and creamy sauce.
  3. Stir in the lemon juice and season to taste. If the sauce is too runny, return to very low heat and whisk until thickened.
