Fry the salmon steaks in butter for 2 minutes per side (keep it quite raw on the inside). Place 4 asparagus spears on the bottom of the salmon steaks. Top with Hollandaise sauce. Hollandaise sauce Whisk the egg yolks and water together over low heat for 2 minutes until thick and foamy. Remove from the heat. Slowly pour the melted butter into the egg yolk mixture. Whisk continually until it forms a thick and creamy sauce. Stir in the lemon juice and season to taste. If the sauce is too runny, return to very low heat and whisk until thickened.
