Ingredients
- Salmon & Asparagus
- 16 spears asparagus trimmed
- 4 steaks salmon sliced
- black pepper
- Hollandaise Sauce
- 4 egg yolks
- 2 tbsp water
- 1 cup butter melted
- 1 tbsp lemon juice
- salt and pepper to season

Instructions
Salmon & Asparagus
- Blanch the asparagus spears in salted water until just softened but still crunchy.
- Fry the salmon steaks in butter for 2 minutes per side (keep it quite raw on the inside).
- Place 4 asparagus spears on the bottom of the salmon steaks.
- Top with Hollandaise sauce.
Hollandaise sauce
- Whisk the egg yolks and water together over low heat for 2 minutes until thick and foamy. Remove from the heat.
- Slowly pour the melted butter into the egg yolk mixture. Whisk continually until it forms a thick and creamy sauce.
- Stir in the lemon juice and season to taste. If the sauce is too runny, return to very low heat and whisk until thickened.
