This salad is fresh, creamy, crunchy and satisfying. If you are concerned about your calorie intake, simply reduce the amount of homemade mayonnaise that you add to the salad.

Ingredients
- Salad
- 3 sticks celery cut into matchsticks
- 2 green apples cut into matchsticks
- 100 g green grapes
- 50 g pecans crushed
- 15 lemon juice
- salt and pepper to taste
- Dressing
- 1 egg free-range
- 2 tbsp lemon juice
- 2 tsp Dijon mustard
- 1/2 tsp sea salt
- 1 cup olive oil extra virgin

Instructions
Salad
- Cut the celery and apples into thin matchstick-sized pieces and toss in one or two tablespoons of home-made mayonnaise.
- Top with the halved grapes, crushed pecan nuts and a good squeeze of fresh lemon juice. Season to taste and serve.
Mayonnaise
- Add the egg, lemon juice, mustard and salt, to taste, to a blender and blend until combined. With the motor still running, slowly add the oil in a thin, steady stream until the mixture takes on a thick, creamy consistency.
