This sauce is a must try. This is one of my husband's favourites! The sauce is incredibly healthy and almost 100% raw (unless for the 1 minute you heat it just before serving).
It has a slight peppery taste and is filled with antioxidants. Most of all, it compliments the beet fillet beautifully.

Ingredients
- Watercress and Rocket Sauce
- 40 g watercress
- 20 g rocket leaves
- 20 g whole grain mustard
- 1 tbsp Dijon mustard
- 2 cloves garlic
- 2 tbsp olive oil extra virgin
- 2 tbsp milk
- 1/2 tsp salt
- 1 tbsp lemon juice
- 1/2 tsp black pepper
- 110 ml sour cream
- Beef Fillets
- 4 beef fillets grass-fed

Instructions
- Put all the ingredients except creme fraise in a blender and pulse until smooth.
- Transfer to a bowl, add the soured cream and mix well. This sauce can keep in the fridge for up to 1 week. Heat it for 1 - 2 minutes just before serving with the beef fillets.
- Bake the beef fillets until done, but not overdone.
- Serve sauce with the beef fillets.
