This sauce is a must try. This is one of my husband's favourites! The sauce is incredibly healthy and almost 100% raw (unless for the 1 minute you heat it just before serving).

It has a slight peppery taste and is filled with antioxidants. Most of all, it compliments the beet fillet beautifully.

Instructions
  1. Put all the ingredients except creme fraise in a blender and pulse until smooth.
  2. Transfer to a bowl, add the soured cream and mix well. This sauce can keep in the fridge for up to 1 week. Heat it for 1 - 2 minutes just before serving with the beef fillets.
  3. Bake the beef fillets until done, but not overdone.
  4. Serve sauce with the beef fillets.
