  1. Preheat the oven to 180C.
  2. Place the butter in a small saucepan and cook over low heat until melted. Whisk in the honey.
  3. Place the milk, melted coconut oil and eggs in a bowl and whisk.
  4. Place the flour, baking powder, bran and cinnamon in a bowl and mix to combine.
  5. Stir the apple, banana and blueberries through the flour. Add the milk mixture and stir until the dry ingredients are just moistened.
  6. Now fold in the butter mixture until just combined. Do not over mix the mixture.
  7. Line muffin pans with paper cups and spoon the muffin mixture into pans. Top each muffin with a strawberry half.
  8. Bake for 25 – 30 minutes or until the tops are golden and a skewer inserted comes out clean.
