Ingredients
- 30 g butter
- 3/4 cup honey
- 125 ml milk
- 125 ml coconut oil melted
- 3 eggs free-range
- 3 cups stoneground flour
- 2 tsp baking powder
- 125 ml bran cereal
- 1 1/2 tsp cinnamon
- 1 apple grated
- 2 bananas mashed
- 250 g blueberries
- 6 strawberries halved

Instructions
- Preheat the oven to 180C.
- Place the butter in a small saucepan and cook over low heat until melted. Whisk in the honey.
- Place the milk, melted coconut oil and eggs in a bowl and whisk.
- Place the flour, baking powder, bran and cinnamon in a bowl and mix to combine.
- Stir the apple, banana and blueberries through the flour. Add the milk mixture and stir until the dry ingredients are just moistened.
- Now fold in the butter mixture until just combined. Do not over mix the mixture.
- Line muffin pans with paper cups and spoon the muffin mixture into pans. Top each muffin with a strawberry half.
- Bake for 25 – 30 minutes or until the tops are golden and a skewer inserted comes out clean.
