- 2 bulbs fennel thinly sliced
- 1 cucumber peeled and chopped
- 1 avocado sliced
- 200 g baby spinach and rocket
- 3 spring onions finely chopped
- 10 sugar snap peas finely sliced
- Ranch Dressing
- 1/2 cup buttermilk
- 1/4 cup yoghurt
- 1 T Dijon mustard
- 3 T parsley chopped
- 2 cloves garlic chopped
- sea salt and black pepper
