Ingredients
- 2 tbsp olive oil
- 1 onion chopped
- 1 tsp curry powder
- 1 tsp turmeric
- 1 tsp ground cumin
- 2 sweet potatoes peeled and diced
- 10 small courgettes chopped
- 1/2 head broccoli
- 200 g spinach
- 3 cups vegetable stock
- 1 can coconut milk or 400 ml
- salt and pepper to taste

Instructions
- Fry the olive oil, chilli and spices for 1 minutes. Add the onion, sweet potatoes, courgettes, spinach, broccoli and stock. Simmer for about 20 minutes.
- Blend the ingredients and add the coconut milk. Simmer for 5 minutes. Season to taste and enjoy!
