This recipe is a great low-carb & satisfying snack. I adjusted this recipe slightly, but got the idea from the great recipe book, I Quit Sugar. It is a fantastic read if you want to cut out sugar, filled with loads of delicious recipes and health tips.

Ingredients
- 680 g chicken fillets
- 1 carrot grated
- 1 egg
- 60 g desiccated coconut
- 2 cloves garlic
- 2 tsp curry powder
- 1/2 tsp sea salt
- 1 cup coriander chopped

Instructions
- Place all the ingredients in a food processor and blend until smooth.
- Roll 24 small balls with your hands.
- Heat oil in a frying pan. When the oil is hot, put the meatballs in. Fry the meatballs in batches.
- Cook for 2 minutes, then roll the meatballs over and cook until done.
