Ingredients
- 4 tbsp butter
- 1 onion chopped
- 500 g mushrooms chopped
- 1/2 lemon juiced
- 1 clove garlic crushed
- 4 cups chicken stock
- 1 cup cream
- 3/4 tsp all spice
- 1 tbsp parsley fresh, chopped
- salt and pepper to taste
- fresh thyme to garnish

Instructions
- Melt the butter and fry the onion and garlic until softened.
- Add the mushroom and lemon juice and sweat for 5 minutes with the lid on. Add the stock and simmer for 15 minutes.
- Process the mushrooms and stock in a blender. Add the cream, all-spice, parsley and seasoning.
- Serve with a gallop of sour cream and thyme.
