Instructions
  1. Melt the butter and fry the onion and garlic until softened.
  2. Add the mushroom and lemon juice and sweat for 5 minutes with the lid on. Add the stock and simmer for 15 minutes.
  3. Process the mushrooms and stock in a blender. Add the cream, all-spice, parsley and seasoning.
  4. Serve with a gallop of sour cream and thyme.
