  1. In a frying pan, heat the oil and fry the onion and garlic until soft and fragrant.
  2. Add the chicken fillets and cook until it almost cooked through.
  3. Add the coconut milk and peanut butter to the mixture. Mix, cook and stir for about 5 minutes.
  4. The mixture must thicken slightly. Add the cashew nut and cook for another 2 minutes.
  5. Add the coriander leaves and season with salt and freshly ground black pepper.
  6. Serve with Organic Basmati rice and / or poppadoms (fried in cold-pressed coconut oil).
