Ingredients
- 1 tbsp coconut oil extra virgin
- 1 onion finely chopped
- 1 clove garlic crushed
- 4 chicken breasts free-range
- 2 tbsp peanut butter organic
- 1 tin coconut milk
- 100 g cashews
- 1 cup coriander chopped
- organic Basmati rice to serve
- Poppadoms fried in cold-pressed coconut oil

Instructions
- In a frying pan, heat the oil and fry the onion and garlic until soft and fragrant.
- Add the chicken fillets and cook until it almost cooked through.
- Add the coconut milk and peanut butter to the mixture. Mix, cook and stir for about 5 minutes.
- The mixture must thicken slightly. Add the cashew nut and cook for another 2 minutes.
- Add the coriander leaves and season with salt and freshly ground black pepper.
- Serve with Organic Basmati rice and / or poppadoms (fried in cold-pressed coconut oil).
