This salad is everything but dull and boring. I love the sharp taste of the radishes and the toasted seed topping. Seeds are high in Omega-3’s, but not that high in calories. It is another weight loss ingredient that I can’t go without.

Ingredients
- Salad
- 1 cup baby spinach
- 1/2 cup white beans drained
- 1 carrot grated
- 4 tbsp dill chopped
- 1/2 cucumber cut into matchsticks
- 2 radishes cut into matchsticks
- 1 tbsp sunflower seeds toasted
- 1 tbsp pumpkin seeds toasted
- Dressing
- 30 ml olive oil extra virgin
- 30 ml apple juice
- 15 ml apple cider vinegar

Instructions
- Mix all the ingredients, apart from the seeds, and toss the dressing over it.
- Sprinkle the seeds over the salad.
