Ingredients
- 2 cups spelt flour
- 1/4 cup walnuts
- 1/4 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tbsp cinnamon
- 1/2 cup coconut
- 3/4 applesauce
- 3/4 cup butter melted
- 1 egg
- 2 tsp vanilla
- 2 tbsp honey
- 2 carrots grated
- 1 apple chopped

Instructions
- Preheat the oven to 375 F (175 C). Grease a muffin tray.
- Mix the dry ingredients together.
- Mix the wet ingredients and then add it to dry ingredients.
- Put tablespoons full of the muffin mixture in the muffin tray. Bake for 20 - 25 minutes.
